Sweet and Spicy Shrimp Kabobs



1/4 cup honey



1 Tbsp. minced canned chipotle chile in adobo



2 garlic cloves, minced



1/2 tsp. salt



1 lb. large shrimp, shelled and deveined



2 Tbsp. minced fresh cilantro



In a large bowl, combine the honey, chile pepper, garlic and salt. Add the shrimp and toss to coat. Cover and marinate at room temperature for 20 minutes or in the refrigerator for 1 hour. Remove from the marinade and discard any remaining marinade.



Thread the shrimp through the tail and head, 2 or 3 per skewer, onto small metal skewers or soaked wooden skewers. Strong rosemary stems are good to use as skewers.



Grill over direct high heat for 2 to 4 minutes, turning once halfway through grilling time. Arrange skewers on a serving dish and sprinkle with the cilantro. Makes 6-8 servings.



Grilled Veggie Kabobs



1/2 lb. whole small mushrooms



1 1/2 lbs. small zucchini, cut into 1-inch slices



12 to 16 cherry tomatoes



Italian salad dressing or other marinade mixture



9 to 12 pineapple chunks



Wash mushrooms; remove and discard stems. Place mushrooms, sliced zucchini, and cherry tomatoes in salad dressing. Let marinate in refrigerator for at least 4 hours. Drain vegetables, reserving marinade.



Thread vegetables alternately with pineapple onto skewers. Cook on grill over medium heat for about 10 minutes, turning occasionally and basting with reserved marinade. Serves 4 to 6.



Ham and Pineapple Kabobs



3 Tbsp. brown sugar



2 Tbsp. distilled white vinegar



1 Tbsp. vegetable oil



1 tsp. prepared mustard



3/4 lb. smoked or cooked ham, cut into 1 inch cubes



1 (15 oz.) can pineapple chunks, drained



Preheat grill for high heat. In a medium bowl, mix together brown sugar, vinegar, vegetable oil, and mustard. Thread ham and pineapple chunks alternately onto skewers.



Lightly oil grill grate. Place skewers on the prepared grill, and brush liberally with the brown sugar mixture.



Cook for 6 to 8 minutes, turning frequently and basting often. Serve when heated through and richly glazed. Makes 4 servings.
