Cheesy Taco Meatloaf



2 pounds ground beef



1 jar (16 oz.) picante sauce



1 cup crushed tortilla chips



1/2 cup shredded Cheddar cheese



Thoroughly mix the beef, 2/3 cup picante sauce and tortilla chips in a large bowl. Place the beef mixture into a 3-quart shallow baking pan and shape into an 8 x 4-inch loaf.



Bake at 350 for 1 hour or until the meatloaf is cooked through.



Sprinkle the meatloaf with the cheese. Bake for 5 minutes or until the cheese is melted. Heat the remaining picante sauce in a 1-quart saucepan over medium heat to a boil. Serve the sauce with the meatloaf. Serves 8.



BBQ Meatloaf



1 lb. ground beef



1/2 cup barbecue sauce



1/2 cup quick oats, uncooked



1/2 cup onion, chopped finely, or 1 packet onion soup mix



1 egg, beaten



Salt and pepper, to taste



Mix all ingredients except 1/4 cup of the barbecue sauce.



Shape into loaf in 12 x 8-inch baking dish. Add remaining sauce on top, or save to top after baking.



Bake at 375 for 45 to 50 minutes or until cooked through. Let stand 5 minutes.



Serve 4.



Vegetarian Meatloaf



1 (16 oz.) carton cottage cheese



4 eggs, beaten



1/4 cup vegetable oil



1 (1 oz.) envelope dry onion soup mix



1 1/2 to 2 1/2 cups corn flakes



1/4 cup chopped onion



1 cup finely chopped walnuts, optional



Preheat oven to 350. Grease a loaf pan.



In a large bowl, combine ingredients. Spoon into prepared pan.



Bake for 60 to 70 minutes. Let the loaf rest for 5 to 10 minutes; turn out onto serving platter.



Makes 8 servings.



Five ingredients do not count salt, pepper, butter, oil and optional ingredients.
