Pumpkin Bread



1 (15 oz.) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups white sugar
3 1/2 cups flour
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. ground cloves
1/4 tsp. ground ginger



Preheat oven to 350. Grease and flour three 7 x 3 inch loaf pans.



In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended.



In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger.



Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.



Bake for about 50 minutes. Loaves are done when toothpick inserted in center comes out clean. Makes 24 servings.



Pumpkin Bars



4 eggs
1 2/3 cups white sugar
1 cup vegetable oil
1 (15 oz.) can pumpkin puree
2 cups all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
2 tsp. ground cinnamon
1 tsp. salt
1 (3 oz.) package cream cheese,softened
1/2 cup butter, softened
1 tsp. vanilla extract
2 cups sifted confectioners' sugar



Preheat oven to 350.



In a medium bowl, mix the eggs, sugar, oil, and pumpkin with an electric mixer until light and fluffy.



Sift together the flour, baking powder, baking soda, cinnamon and salt. Stir into the pumpkin mixture until thoroughly combined.



Spread the batter evenly into an ungreased 10 x 15 inch jellyroll pan. Bake for 25 to 30 minutes. Cool before frosting.



To make the frosting, cream together the cream cheese and butter. Stir in vanilla. Add confectioners' sugar a little at a time, beating until mixture is smooth. Spread evenly on top of the cooled bars. Cut into squares. Makes 24.



Pumpkin Oatmeal



1/2 cup old-fashioned rolled oats
1 cup soy milk
1/4 cup canned pumpkin puree
3 dashes ground cinnamon
1 Tbsp. chopped walnuts
1/2 tsp. honey



Stir the oats, milk, pumpkin puree, and cinnamon together in a saucepan; bring to a gentle boil. Reduce heat to low and simmer 5 minutes, or until the oatmeal reaches your desired consistency. Transfer to serving bowl. Garnish with walnuts and honey. Makes 1 serving.
