If you visit Great Southern Café in Seaside and don’t order a mojito, you’re missing out – well, according to bartender Shawn Batxter that is.

“We averaged over 350 mojitos a day last year,” he said. “We took the classic lime mojito and put a twist to it; we added 10 flavors.”

Those flavors include pineapple, grapefruit, strawberry, peach, mango, guava, cherry, coconut and coconut melon.

“The mojito is just a great, refreshing, beachy drink,” Baxter said. “Ours are made with all fresh fruit, and hand-picked mint; no cutting corners here – it’s legit.”

With such a popular drink on the menu, Baxter had trouble choosing one to feature as his signature sip, but after contemplating the options, he chose the Dragon Berry Mojito as his featured drink.

“It’s the prettiest,” he said. “It’s really our strawberry mojito, but we use Bacardi Dragon Berry rum so we use that name for it.”

As for Baxter, he said he is not really a rum guy personally.

“I’m definitely a vodka guy,” he said. “I like a good Tito’s and ginger ale, that’s my go-to drink, although lately I’ve been onto a tequila kick with George Clooney’s Casamigo’s Reposado.”

Baxter was born and raised in Destin but said he likes the laid-back community-style atmosphere of Seaside.

“It’s a whole other world here,” he said. “It’s more of a family-oriented style, small home-town feel. We have regular customers who know us by name and even out-of-town regulars who come in just to see us. It’s just a great spot, we have a great owner in Jim Shirley, and why not, you’re working at the beach. It’s awesome.”

On his off time, Baxter said he likes to live the local life like a vacationer.

“I’m a big golfer, and I like anything on the water,” he said. “Hanging out at the beach and fishing – anything just to chill and relax. I’m also a big foodie, so I like going to other restaurants because it’s nice to be on the other side of the bar for a change.”
