If there is one person who truly loves her job, it’s Bailee Eubanks of Floyd’s Shrimp House at The Boardwalk on Okaloosa Island, Fort Walton Beach.

“I absolutely love it. I love coming to work everyday. I mean you cannot be angry looking at that view everyday,” she said, motioning to the Gulf of Mexico right below the open-air bar. “A lot of people come and just fall in love with it. I’ve been here six years and not even had a thought about leaving.”

In fact, Eubanks said she loves bartending so much she has become known as the bartender among her family and friends.

“I’m always the bartender,” she said. “I’m the one who brings the liquor and the mixer, and I also practice cup-spinning in my off time, too. It might be weird, but I like to perfect my profession even on my spare time.”

Eubanks said learning new drinks and creating custom cocktails are details she loves most about her job.

“Honestly, making all the drinks themselves is my favorite part,” she said. “It challenges you, memorizing each drink and satisfying each customer with the drink you prepare for them. Every day you keep adding to that list because you have customers who will ask you for something different, and I’ll say, ‘Sure, I don’t know how to make it, but we’ll figure it out together.’”

When asked what her drink of choice would be on Floyd’s menu, Eubanks had a ready answer.

“I would have to say our Raspberry Lemonade hands-down,” she said. “It has freshly squeezed lemonade, fresh raspberries and raspberry vodka. It’s delicious, and I absolutely love it!”

As for her signature sip, Eubanks chose to feature a unique drink popular at Floyd’s — The Fish Hook.

The drink mimics the hue of the Emerald waters of the Gulf and includes Bacardi Raspberry Rum, melon liqueur, Blue Curacao, sour mix and a splash of Sprite.

“It literally tastes like a Jolly Rancher (candy) in a cup, and it looks like a mini aquarium,” Eubanks said. “We garnish it with a skewer of Swedish Fish candies, an orange slice and, of course, a fancy umbrella.”
