A.J. Carroll likens bartending at The Crab Trap on Okaloosa Island to taking the role of an unofficial tour guide.

“Oh, people ask me questions all the time,” said Carroll. “'What is there to do around here? What’s your favorite place to eat?' I just answer everything. The most popular question is about the nightlife. We are one of the only areas that stays open ‘til four in the morning.”

Even with the tour-guide aspect, Carroll said the people he meets are actually his favorite part of the job.

“You have your days when you meet the most interesting people,” he said. “They keep your day going and keep you on your toes. You never know what you are going to get when you are at the bar. Plus, you work at a beach bar, what better bar could you work at?”

When asked what his favorite spirit is, Carroll said he prefers whiskey, but working at a beach bar makes the most popular drink at The Crab Trap the direct opposite.

“Frozen drinks, frozen drinks, frozen drinks,” said Carroll. “The local drink is the Bushwacker or our Voodoo Bacardi Buckets.”

Carroll chose to feature something in between his stout spirit preference and the popular sweet drinks as his signature sip — the Emerald Coast Margarita.

“What I like about it is it’s not too sweet and not too sour; it’s an equal balance.”

With the Emerald Coast Margarita, you can even customize the liquor, Carroll said. Choose your favorite tequila, or make it a top shelf Emerald Coast Margarita. Either way, with this drink in your hand, you will match the Gulf of Mexico just a few feet away on the beach below.

“It gives us the beautiful green feeling of the Emerald Coast and our beautiful water,” Carroll said.
