OKALOOSA ISLAND — After numerous delayed openings, Stewby's Seafood Shanty hopes to have its new Okaloosa Island location open by the Fourth of July weekend.
Gary Bain, district manager of Stewby's, said the new opening date is the eighth projected opening in recent months. Construction delays repeatedly forced the restaurant to push back plans for a soft opening, he said.

The original Stewby’s Seafood Shanty is on Racetrack Road in Fort Walton Beach. The new location will be across from the Blue Dolphin Beachwalk on Santa Rosa Boulevard.
In addition to the restaurant, a second building was constructed on the site that will house a small seafood market and souvenir shop. The two shops will sell Stewby’s sauces, seasonings, apparel and to-go meals such as shrimp salads.
Bain said the market and shop will open a few weeks after the restaurant.
There are about 48 parking spaces available for both buildings.
According to its website, Stewby's is based on a former family restaurant called Sam’s Oyster House. The eatery still features Sam’s recipes such as gumbo and signature sandwiches with coleslaw and tarter sauces on a sesame seed bun. Stewby’s uses local fish from the docks in Destin and neighboring counties.
The new restaurant will have the same menu as the Racetrack Road location.
