Autumn Spice Ham Steak

1 1/2 Tbsp. butter 1 (2 lb.) ham steak 1 red apple, cored and thinly sliced 1 green apple, cored and thinly sliced 1/2 cup maple flavored pancake syrup 1 tsp. ground cinnamon

Melt butter in a large skillet over medium-high heat. Fry the ham on both sides in the butter until browned. Lay the sliced apple over the ham. Pour the syrup over the apples. Reduce heat to medium, and simmer, stirring occasionally until the apples are cooked through.

Sprinkle with cinnamon, and serve immediately. Makes 6 servings.

Caramel Apple Bars

2 cups all-purpose flour 2 cups quick cooking oats 1 1/2 cups packed brown sugar 1 tsp. baking soda 1 1/4 cups butter, melted 2 cups apples, peeled, cored and sliced 1/2 cup chopped walnuts 1 1/2 cups caramel ice cream topping 1/2 cup all-purpose flour

Preheat oven to 350. Grease a 15x 10 inch jellyroll pan.

Crust: In a large bowl, combine the flour, quick cooking oats, brown sugar, and baking soda. Stir in the melted butter. Mix until crumbly. Press 1/2 of this mixture into the prepared baking pan. Bake for 8 minutes in preheated oven.

Caramel filling: In a small pan over medium heat combine the caramel topping and the remaining 1/2 cup of flour. Stirring constantly, bring to a boil and cook for 3 to 5 minutes.

Spread apple slices evenly over the baked crust. Sprinkle on the nuts. Then pour the caramel filling over the apple layer. Crumble the remaining crust mixture over the top of everything.

Bake again for 20 to 25 minutes or until golden brown. Cool before cutting into bars. Makes 48.

Breakfast Rounds

1/2 cup peanut butter 4 English muffins, split and toasted 1 red apple, cored and sliced 1/4 cup packed brown sugar 2 Tbsp. margarine 1/4 tsp. ground cinnamon

Spread 1 tablespoon of peanut butter onto each muffin half. Top each one with a few apple slices. In the microwave, melt together the brown sugar, margarine and cinnamon, stirring frequently until smooth. Drizzle the cinnamon mixture over apple slices. Makes 8 servings.
