FIVE INGREDIENT COOKING: An apple a day
Caramel Apple Pork Chops
4 (3/4 inch) thick pork chops
1 tsp. vegetable oil
2 Tbsp. brown sugar
Salt and pepper to taste
1/8 tsp. ground cinnamon
1/8 tsp. ground nutmeg
2 Tbsp. butter
2 tart apples, peeled, cored and sliced
3 Tbsp. pecans, optional
Preheat oven to 175. Place a medium dish in the oven to warm.
Heat a large skillet over medium-high heat. Brush chops lightly with oil and place in hot pan. Cook for 5 to 6 minutes, turning occasionally, or until done. Transfer to the warm dish, and keep warm in the preheated oven.
In a small bowl, combine brown sugar, salt and pepper, cinnamon and nutmeg. Add butter to skillet, and stir in brown sugar mixture and apples. Cover and cook until apples are just tender. Remove apples with a slotted spoon and arrange on top of chops. Keep warm in the preheated oven.
Continue cooking sauce uncovered in skillet, until thickened slightly. Spoon sauce over apples and chops. Sprinkle with pecans, if desired. Makes 4 servings.
Apple Enchilada Dessert
1 (21 oz.) can apple pie filling
6 (8 inch) flour tortillas
1/2 cup butter
2/3 cup white sugar
2/3 cup packed brown sugar
2/3 cup water
1 tsp. cinnamon
Vanilla ice cream, optional
Preheat oven to 350.
Spoon apple filling evenly onto 6 tortillas.
Sprinkle with cinnamon.
Roll up and place seam side down in lightly greased 8x8 baking pan.
Bring butter, sugars and water to a boil. Reduce heat and simmer about 5 minutes.
Pour sauce evenly over tortillas and sprinkle on a little cinnamon.
Bake for 20 minutes. Serve warm with vanilla ice cream, if desired.
Chocolate Apple Nut Salad
1 (5 oz.) pkg. instant vanilla pudding mix
1 cup milk
1 (12 oz.) container frozen whipped topping, thawed
6 apples, peeled, cored, and chopped
6 (2.16 oz.) bars chocolate-coated caramel-peanut nougat candy, chilled and sliced
1/4 cup seedless grapes, optional
Prepare the pudding using 1 cup of milk; blend together with whipped topping.
Add the apples, candy bars and grapes. Mix together and refrigerate until chilled. Makes 12 servings.
Five ingredients do not count salt, pepper, butter, oil and optional ingredients.
