Meet Andrew Evans of Tango 3
It all started 10 years ago, when Andrew Evans of Tango 3 Coffee Co. decided instead of waiting tables, he would try his hand at crafting lattes.
“Honestly, I just didn’t want to wait tables, so I started at Starbucks when I was 17,” Evans said. “This will be my 11th year working in coffee.”
When it comes to his favorite cup of joe, Evans said a well-brewed Ethiopian coffee is his preference, but he does have a fancy side.
“A cappuccino,” he said when asked his fancy drink of choice. “I think it’s the perfect milk-based drink with the right balance of espresso to milk.”
In fact, Evans decided to feature his favorite fancy coffee as his signature sip.
“The drink I chose is the Traditional Cappuccino,” he said. “It is a double shot of our single-origin espresso, which right now is a natural processed Ethiopian Kochere (a region in Ethiopia), then about 4 ounces of steamed milk. It’s my favorite.”
Evans explained at Tango 3, everything is done with precision.
“Everything we do, we do by weight,” he said. “Literally, down to all the shots we are pulling we do by weight, and we time everything.”
As for his favorite aspect of the job, Evans said he has two — the people he meets and growing his coffee-crafting skills.
“Honestly, the connections I’ve made,” he said. “I’ve done a lot of cool things through coffee. It’s an industry that is pretty young still, as far as the craft coffee side of things. There’s just a lot to learn, and it just feels like I’m always learning.”
Evans said over the past two years he has participated in a conference at the Specialty Coffee Association as well as the World Barista Championship, and he is looking forward to more coffee-world competitions in the future.
When it comes to his personal time, Evans said, like his love for coffee, competitions really drive him.
“I like playing video games. When I was younger, I traveled to play fighting games professionally, and so that’s my favorite hobby,” Evans said. “Anything involving competition is what I like to do.”
