From Grill to Glory: New barbecue restaurant brings smoked goodness to Destin

Aaron and Ruthann Vipperman are the friendly faces behind the counter at Rollin Smoke BBQ, a new restaurant in the Destin Commons shopping center. The couple recently moved their popular food truck business into the brick and mortar location and say the response has been amazing.

“A lot of people know me from my food truck,” said owner and pit master Aaron Vipperman. “We cook every day. You come in here and get pork, chicken, beef or sausage, and whatever we are cooking and you know we cooked it that same day.”

Aaron said that he got his start with smoking meats about eight years ago, at a time where he decided to go full-force into the barbecue arena and leave his former career in excavation behind.

“I started getting the bug for smoking on the back porch with the grill,” he said. “I modified it into a smoker and then I got hooked on it. I saved up enough to build a trailer to compete, but then I basically skipped competing and went straight into the food truck business.”

His wife and business partner Ruthann testifies to Aaron’s passion for the pit.

“He would go to bed with ear buds in watching smoking techniques on You Tube,” she said. “One day he went out to the food truck and woke me up at three in the morning with a piece of brisket in my face…he was that excited about mastering the art of smoked brisket.”

Aaron said when it comes to smoked meats, he lives by one motto: “You can’t be the cheapest and the best,” he said. “My theory is, if you’re going to pay good money for something, you want it to be the best.”

In keeping with that motto, Rollin Smoke BBQ keeps a simple menu in order to hone in on quality food and personalized service.

“Our menu is very basic,” said Ruthann. “We have pulled pork, pulled chicken, cut brisket and ribs. We pull all the pork to order, and our hand-cut brisket comes directly off the smoker to your plate.”

As for the service, Ruthann said it’s a family run business and they intend to keep it that way.

“When it’s owner-operated you get a totally different experience,” she said. “My husband is here seven days a week, and he loves talking to people; he doesn’t know a stranger. Our nine-year-old daughter also loves coming in and helping out, it’s her passion.”

When asked what he does different with his meat, Aaron said his smoking style is 100-percent wood based.

“No gas, no propane,” he said. “It’s pit-style barbecue with a gravity-fed pit. You get the real taste of it that way. It’s very classic, home-style food.”
